Harvested in the early morning from selected mountain side slopes in the Stellenbosch and Franschoek areas - both renowned for specializing in these varieties. The grapes are hand sorted and then destemmed before gentle pressing. The Sauvignon Blanc was fermented at cool temperatures in stainless steel tanks to retain freshness while the Semillon was fermented in 225 liter new French oak barrels for 6 weeks to enhance complexity and richness. The wine can be stored for 3-5 years.
