Production and maturation: The grapes have been manually harvested for this Pinotage, selected from premium Cape vineyards. Harvested in the early morning at optimum ripeness and destemmed, not crushed, to enhance fresh berry characters. Fermented for 5 days on skins at 23-25°C and then pressed before dryness to maintain soft tannins. Malolactic fermentation in stainless steel tanks and then matured for almost a year in small French barrels to further aid in the development of structure and soften the tannins.
