Vivanti Valpolicella Ripasso

Color: Dark ruby red
Aroma: A deep ruby red wine with an aroma of typical Ripassso wine, with notes of dark chocolate and delicious hints of dark cherries, violets and spices.
Taste: Full-bodied with a well-structured flavour of dark fruits, a fresh acidity and soft but distinct tannins and a slight sweetness in the balance. An elegant Ripasso with a musty palate.
Food pairing: Goes well with dark meat and game, parmesan and matured cheese.
Production and maturation: The fully destemmed grapes are pressed and allowed to ferment at 25-28° C, followed by 12 days of maceration with automatic daily pressing of the pomace. After 6 months in stainless steel tanks, a second fermentation is initiated by the addition of pomace and lees from an Amarone wine, according to the Ripasso method. The wine is then stored in barrels for 12 months, followed by 6 months in the bottle. Stabilization on this non-filtered wine, is done through natural clarification. It can be aged for 10 years. Should be aired or decanted before serving.
